We went to the Interpretive Centre that was inside the Seaweed Pie Cafe and saw a video and displays showing the harvesting of Irish Moss. Harvesting takes place from boats or by the traditional method using horse-drawn rakes in the surf and on the shore...the tides and winds have to be just right. This seaweed is harvested for its natural gel-forming properties of carrageenin, and wind up in your ice cream, jellies, chocolate milk, baby formula, diet foods and beer. The horses that they use are Clydesdales and Belgians.
